Happy Monday friends! I hope everyone had a wonderful weekend! Me? I felt like I made some accomplishments. We got our kitchen cleaned out and organized in a way that I think we be better for us in the long run! I am super excited about it. I have made overnight oats for a couple of days, as well as a Denver Omelet inspired breakfast casserole that I am sharing with my family. I also made some sausage biscuits as well. Now to the real point of this blog, meal planning for the week:
Dinners for the week include:
Chicken Fajitas with homemade refried beans.
Cheeseburger and Tot casserole with green beans
Fried Chicken (this is a new recipe for me and will be made in the air fryer) with unspecified sides, but likely steamed broccoli.
Easy Chicken and Dumplings (this one is super easy and quick. Hoping it turns out to taste as well as it sounds.)
Beans and cornbread (probably not pinto beans this week)
Fettuccine Alfredo (probably over spaghetti squash for me), salad and garlic bread.
I will be making a variation of the Pioneer Woman's 7 can soup because it sounds good to me for lunch. I have some chicken noodle-less soup left that I should finish up first. Plans for my kids also include some homemade lunchables. I may need to purchase more containers for this though because I only have two and I didn't even realize we had those until we were cleaning out the cabinets today.
I feel like this is going to be a good week. The scale could have been kinder, but I was having some issues going on this week and I think stress and not eating got the better of me. Things have changed from years ago. I was a major stress eater. I guess, growing up when I did, we really sort of ate for all occasions (happy, sad, depressed, angry). I am glad I'm not that person any longer and am making strides to have a healthier relationship with food. Let's make it an awesome week!
